Cooking beans & rice for 75 people

Tamara there are many recipes on site for beans for 100 and rice for 100, just use 3/4 of the amount for 100 to feed 75.

Brenda, about 35 pounds and I like boneless chuck for this; juicier than rump or round and more flavor.

About 3 - 3 1/2 gallons of beans and about 4 1/2 gallons of rice.
