Because this is over dinner time and people will not have eaten before they arrive at the function, you need about 1 1/2 pounds total food per person.

One serving of dips or spreads is 1/4 cup plus chips or crackers. You want 8-12 bites per person for the first hour or hour and a half, and 4-6 bites per hour for each following hour.

The chocolate fountain- see the whole article on chocolate fountains. Chocolate fondue is safer and easier to serve, usually better quality.

With 300 people, I would add fruit trays with dips and at least three other individualrolls, bars or bites.

Thank you so much for the help. At least now I know what to plan for. And I will use the chocolate fondue.
