Do you have a recipe for peach cobbler for 100 and have you ever used mace in the recipe and what is the flavor factor? |
ellen 02/19/09 |
Mace is delicious in peach cobbler. I use it instead of nutmeg. You want about 9-10 9x13 pans. If you are cooking them separately, the easiest thing is to mix them separately. I often make cobblers with the fruit of choice and a spiced up 1 layer yellow cake mix for 1 9x13 pan (regular two layer cake mix makes 2 pans). Here is a link to a good recipe- use double for a 9x13 pan. allrecipes.com/Recipe/Southern-Peach-Cobbler-2/Detail.aspx |

Thank you SO much for UR immediate response. I found the dump cake on allrecipes.com as u mentioned, read every comment and suggestion for the bacis DC I recipe HOWEVER, since I was looking for a recipe for 150 I had to make recipe on my own. I had no time for trial and error so I was at the mercy of... The pans I used were the very lg metal pans 21x13x4 - I made 8! I used 3-3LB cans of peaches drained only 1 can, 1cup of Br.sugar -1tsp of cinn. 1/4tsp of MACE ( which provided the "bit" surprise flavor that keeps them wondering ) Thank U . Now the problem I used only one box of cake mix, pressed down, and 1-lb shredded butter. baked 400 for 45 min and disaster!!!! The cake mix provided NO CRUST only a thickening for the cobbler,SO I had to think fast!! I happened to have bisquick oot the cooking site, I made a huge batch of thin batter and poured a layer over the whole top of each-- MAGIC-- I had a UMMY crust and all was saved. Served with Pineapple ice cream...need I say more. I'm so happy I found you. I prepare food thru our church for a local out reach center 2 at. a month for lunch so you certainly will be hearing from me again.Next week I'm cooking for 160 for a Boy Scout Banquet, I need somthing LAVISH & GREAT Kiddos and adults. Any suggestions are welcome! My HATS OFF TO YOU... UR THE BEST!!! |

Thanks for the great feedback, you clearly are a cook who doesn't panic! It was a big cheerup when I got home from the hospital. That orange dijon wedding chicken is mighty tasty, very popular and can be prepped ahead. See the thread called "wedding reception menu ideas" for a whole collection of great food for 150- |

tapioca Hi! My husband's mother always made a side dish she called peach tapioca. All I know is that she used fresh peaches, orange juice and maybe water plus tapioca as a thickener. Can anyone help? Thanks. |

You just use the tapioca such as minute tapioca recipe with juice substituted for milk. It is a popular way to prepare in the tropics. Here are a couple of typical recipes: southernfood.about.com/od/peaches/r/bl30621q.htm www.cooks.com/rec/view/0,1613,153165-236193,00.html |
