Assuming you are just making a nice side salad, not a main dish salad:
2 ounces lettuce per person cut up= 140 ounces=9 pounds and a bit 2 ounces of the shredded carrots and cukes- you just weigh them at the produce dept- any mix you like- bell peppers can also be added to sliver up, and I like to get one really nice big cauliflower to thin slice into bits- put that in a separate dish get cherry tomatoes if you are mixing them in, try to get the tiny ones so you don't have to cut them- MUCH less juice and the salad stays much crisper- 3-4 pounds Dressing 2 quarts thin or 3 quarts thick, make sure one is fat free or reduced calorie ranch, make it self serve to avoid sog. about 1 ounce of shredded cheese per person, which is about 5 pounds croutons are popular with teens- make your own- about 12 cups |
