Hello everyone... Do you know if I can sub 4 tblspns of flour with 4 tblspns of corn starch? I have a cheesecake recipe which calls for 4 tbl of flour, but I need to make this "flourless" - meaning no flour/glouten. So is cornstarch appropriate or not and do I use the same amount of tblspns.

You use 2 tablespoons of cornstarch to get the same thickening as 4 tablespoons of flour. You might also consider adding 1 extra egg yolk. |

Ellen....Oh thank you... thank you.... Do you have any suggestions for the crumb bottom. This gal cannot have flour or gluten type foods. Can I grid up some fresh almonds fine in my food processor like into a flour type and add a bit of sugar and butter? Will that make a good crumb base? Do you know?
