Wedding Menu for 100

This is my first attempt at quantites for the reception menu. The wedding is at 4:30 and the reception is follow at the same location.
Feel free to make suggestions.

1. Pulled Pork Sandwiches (with BBQ sauces) – 25 pounds raw boneless Boston Butt
2. Turkey Sandwiches – 45 pounds raw whole turkey (with mayo, mustard, & cranberry relish) Also to be served with a condiment tray of lettuce (7 pounds shredded), tomatoes (12 pounds sliced), red onion (10 large)
3. ‘Lil Smokies with BBQ/Grape sauce (12 pounds)
4. Pasta Salad – 7 pounds dry pasta
5. Potato Salad – 35 pounds potatoes
6. Relish Tray (olives, pepperoncini, tiny dill pickles, small sweet pickles, bread & butter pickles, pickled okra) 64 ounces of each type pickle
7. Veggie Tray with dip (cauliflower – 16-20 pounds, broccoli – 8-12 pounds, baby carrots – 4 pounds, cucumbers – 8 each, cherry tomatoes – 4 pints, celery – 8 bunches) with 8 cups ranch dressing
8. Fruit Tray with dip (cantaloupe – 4 each, honey dew 4 each, watermelon – 20 pound melon, green & red grapes – 4 pounds each kind, strawberries – 4 pounds)
9. Cheddar Ranch Cheese Ball with assorted crackers – (10-12 pounds of cheese ball and 6 pounds Sociable crackers)
10. Spinach Dip with assorted crackers (6-8 pints of dip and 6 pounds of a mixture of regular and sundried tomato basil Wheat Thins)
11. Shrimp Dip with assorted crackers (6-8 pints of dip and 6 pounds of a micture of regular and white Ritz crackers)
12. Bride’s Cake (Red Velvet)
13. Groom’s Cake (White)
14. Beverages: Lemonade with strawberry garnishes,
15. Tea with lemon garnishes,
16. Water (decorated bottled water on the tables),
17. Beer, etc

I forgot to add that the shredded pork and fried turkey will be served on small soft rolls and that I am planning on 250 rolls. Also, there will be a variety of mini choclate bars on the tables.

People will be eating dinner, and this looks pretty good. I would allow 1/4 cup shrimp dip per person. I would double the cherry tomatoes and about 1/3 less cauliflower. Otherwise, it looks good.
