does anyone know if you can just substitute rice flour for wheat flour in cake recipes? I tried to substitute it in bread and had several flops before I knew about xanthan gum. My little nephew is also allergic to eggs, soy, & peanuts. |

There are some good cookie recipes made with rice flour, but it has the same problem in cakes as in bread- no lift. If you have gotten good at the xanthan gum, you could try adding the right amount of that when you do the substitution. Since peanuts are actually a bean, if your nephew is not allergic to nuts, there are some really delicious classical cakes/ tortes made with almond flour but they all have eggs! You may want to start the tradition of a giant cookie decorated instaed of cake with the little guy. Ellen |
