Help! crunchy vegetables for a buffet

Have a rsvp of 120 - party Saturday. Too much "soft" stuff already...pastas, lasagna, beans and dogs, Beef strogonoff/rice, chili, etc. (Im not turning down offers from those who want to bring a 1/2 tray of their best recipe.) But this is leaving me without a "crunchy item on the plate". We have color, and flavor, but we are lacking TEXTURE here. Help folks. Something besides raw veggies and dill dip please. Thank you, Sue

I personally LOVE whole green beans or mixed green and wax lightly cooked with a bit of seasoning or julienne carrot. Or al dente asparagus. Or how about a crunchy cucumber salad- if you don't want to go dill, you could go southern sweet and sour. Or a crunchy slaw- see the several specialty recipes I have posted.
