Hi, Valerie, If you take the time to look over the site, you will see that it is designed for self help and all these foods are covered in the sandwich event article, the plan for 100 lists, the beverage planning page, and the fruit tray page. When you look these over, plan for 1 1/2 times the amount for 100 people, then add another 10% if they are teens or college age. If you want to post your estimates, I will be glad to check them for you. |

Hi, Dee, One pound of polenta in 2 quarts of water serves 4. You would use a bit less if it is packed into loaves, sliced and grilled or browned, a bout that much if it is soft/ spoonable. I buy 28 pounds of fresh asparagus per 100 if I am going to be snapping the ends myself. |

Saletta, all these foods are covered in the plan for 100 table, even the difference between chicken pieces and chicken quarters; you can calculate this yourself. You may want to read the article on planning and shopping for big holiday dinners to get started. When you have done so, just post the estimate and I will be glad to check it for yu. |
