I have had great success in modifying Seniors' diets, basically using what they like, and making small additions or modifications.

For instance, I add lemon juice, onions, and sprinkles of little hot peppers to fried potatoes. (Some still insist on heavy Southern Cooking.) Of course I cook in olive or vegetable oil. To avoid sugar, we often season with hot sauce instead of ketchup. Minimizing calories is important, because sometimes people who lose mobilization become more lethargic.

I used to believe all gravy was bad, but it can be nutritious. I will "tune in" later.

Ellen, if you know anyone from the Circle who needs help with parents, cooking, cleaning, etc., I now have an opening, preferably in the morning.
