I am having a birthday party and there will be about 100 people plus kids. I am planning on having a tomato/feta/couscous salad, spinach/strawberry/goat cheese salad, bbq ribs and chicken breasts with hot dogs for the kids. Can you help me determine how much I will need for these items. I know not everyone will eat both ribs and chicken, but want to make sure there is enough. |

First of all, how many kids? Do not depend on them to eat hot dogs- many will want ribs or chicken. You also need at least one kid-friendly side dish, such as a fruit tray, fruit salad, potato chips, etc. The couscous salad, allow 1/2 cup per person plus 10%(make your small recipe and measure). The spinach salad, 12-16 ounces of spinach serves 8. As to the meat, I allow 1 piece of chicken PLUS 1/2 pound ribs per person, this is the minimum to make sure everyone gets their first choice. |

I would suggest skip the hot dogs. Anyone who wants one could do sausage and peppers. For 100 people, I would do 100 patties, 100 pieces of chicken and 20 pounds of sausage plus the peppers and onions. See the sandwich event page for help on rolls cheese, and condiments. 4 gallons potato salad (see my recipes for 100), 3 slaw, 3 cuke salad. |

See the better green bean casserole for 60 in the holiday cooking section at the top of big pots. Make 1 1/2 times the recipe. |
