we are having a supper to end our "fun day" celebration for our town---there will be approximately 150 people attending---in the past we have had barbequed pork loin,steaks,cheesy potatoes---we need a simple menu that will feed this many but only have 2 conventional ovens,and the nekko roasters and small roasters--any ideas for chicken breasts that would feed this number and not consume a whole day of cooking? thank you |

The wedding chicken, which can be made ahead and frozen, is great for a group this size. Baked rice pilaf. See the Big Pots index for the link. Or the baked potato bar with a chopped beef or pork dish as one of the toppings. Two roasters full of made ahead meatballs in sauce for meatball subs? Or blow yourselves to a third roaster and do stew, chili, or some such meaty saucy thing. |
