I am having a casual wedding reception for 120 people in October of this year. I plan on serving bbq pulled pork sandwhiches and beef brisket sandwhiches. I have 2 questions. #1 - How much total "raw" meat do I need to purchase of each for mainly adults? #2 - I have access to a deep freeze freezer. Is it to early to purchase these meats now, so I can buy them when on sale?

About 6 months is good for freezing meats. I would try for 5 ounces of ready to eat beef PLUS 3-4 ounces ready to eat pork per person (depends on if you are in a pork-eating part of the country). Since brisket is a fatty meat that shrinks, that is 1 pound raw brisket for each 2 people PLUS 2 pounds boneless pork shoulder for each 7 people. Do look at the thread called "Pulled pork and brisket". Great pulled pork recipe. |
