Chicken wing lunch for 35

Hi, I am catering a lunch for 35. I plan to serve chicken wings (large roasters - 6 - 8 per pound), potato salad, coleslaw, carrots, celery, deep fried cheese sticks/battered mushrooms/fried pickle spears.

I need help in determining amounts of each.

Linda, this is a site for home cooks, as I cannot take on the responsibility of advising pros on paid preps- for this I recommend the furums at chef2chef.com.

If it were a family/volunteer situation, I would allow 1 pound raw wings per man or teen, 3/4 per woman. You would use 1/3 the amount for 100 for the potato salad and slaw, see the veggie tray page for help on the finger veggies (don't forget the ranch dip), 2 cheese sticks, 3 mushrooms and 1-2 pickle spears per person.
