It is always a treat to have a note from a reader! I don't use the commercial meat subs too much anymore, I like making the gluten roasts and other gluten products. I recommend "Simply Heavenly" and "cooking with gluten and seitan" as my two most used gluten cookbooks. But when I do use the commercial ones, I think they are good enough to simply use them in regular meat recipes, especially the new refrigerated ones like Gimme Lean. I have made my mom's Nebraska meatloaf, using Gimme Lean or TVP and cooked lentils or mashed cooked beans.

I liked the canned cutlets from Worthington, they are chewy and not bad. And the soydogs taste like all cheap dogs everywhere and to my taste, better than turkey dogs.

All can be improved by heating some fresh ginger into their cooking oil before preparing them.

I just put up the gardenburger recipe on the bigpots category ('cause I make them 24 at a time), this is tasty, they can be frozen, grilled, etc.

I will be posting some more soy recipes later this summer, let me know if you have a specific one in mind.

I recently started using soy products and one of them is caleed "fine soy white".Its dehidrated soy flakes which I have used to make chili con carne and other recipes where groun beef is called for. However, I want to know how can I use this product to confection meatloaves, hamburguers, and the like where this product has to be given a shape? Besides reconstituting them in water, like I am doing reightnow, do I require other ingredients like flour and eggs? I need to know so I can make better use of this product which I happen to like very much.

Hi, Lillian,

This can be used in basically any ground meat recipe once it has the water added. You can also use tomaoto juice or any broth for a rich, different flavor.

You can mix with eggs and all kinds of fillers (mashed potatoes, etc) to get nicely shaped loaves. Take a look at the "neatloaf" recipe on the recipebox index page to get some ideas.

As I don't have access to an Asian foods store, I wonder if there is an online store where I might be able to purchase yuba, and other Asian soy products not easily found in a supermarket or health foods store.

G'day there! We've been vego's for 7 years now and I like to experiment. I am in Australia and the brands of meat substitutes that you talk about, I have never heard of. I doubt that we have the range of products you do at the supermarkets. Apart from successfully making good Gluten Steaks, I wouldn't know where to begin to have a go at making things like our "Not Burgers' by Longalife which Sanitarium Health Food Co. own (7th Day Adv) and the vegetarian sausages and hotdogs, which are quite expensive to buy. The 'Not Burgers' say their main ingredients are, Soy protein, cereals and potato. Any ideas or could you point me in the right direction as to the techniques used in making this type of product? Thanking you in advance. (I've looked up most web sites like vegsource etc and nothings there like what I am after).

I got the book "Simply Heavenly" recently but I haven't really gotten into the "un-meats" yet. I was surprised to see how many recipes call for MSG , what with all the stigma attached to it. I know in the book that they give reassurances of it's safety but I am still a little hesitant about diving into using it. So I would appreciate any opinions or if anyone could point me towards more info on it... Thanks.

I, too, want to know how to make my own hotdogs, burgers. Also, I hear people on line mentioning "crumbles" and I have no idea what they are talking about, but it sounds like something I would want. Can you make this?

I have a soymilk maker and have okara. Would this help?

Please go to the Clear Light section for soy (okara)nugget recipes and to the Recipe Box section for seitan/wheat meat recipes, which include soy meats. In the Big Pots section, you will find an excellent Gardenburger recipe that makes 24 veggie burgers. I don't make hot dogs, I use the Indonesian satay recipe fur BBQ skewers.

"Crumbles" are textured vegetable protein TVP, a soy product, which is dry. You add warm liquid, water, tomato juice, etc, tp hydrate it, them use it like ground beef.

Dear Amir, I posted the nutrient counts supplied by the USDA for okara on this website. Here is the page:

and it tells exactly where to cite the information (volume, etc).

Most of the scientific study on okara that I have found has been done in Japan, so I can only read what has been translated. But one of the researchers said that once it is precooked as I recommend in my recipes, it has about the same food values as soft tofu, the protein is highly digestible (much more digestible than whole soybeans), and it has more fiber, both gel/pectins and cellulose, than tofu has.

You use these granules by soaking them until tender and then using like the meat.
I use a variety of broths and bouillons to soak, often adding some tomato juice, to start building the flavor.
You want an egg if you eat them to help them stick together.
I use TWO OR THREE DROPS of natural smoke flavor to help get the grill flavor, some onion juice and a bit of garlic puree, a little tamari for thw flavors. I often add some sauteed very finely chopped mushrooms.

All my soy meat recipes are posted, the unchuck is my favorite, only about 29 minutes prep time, several hours cooking, but then you can freeze it and use as you like.

Nicky, TVP, the processsed dried soy crumbles, is made by a lengthy manufacturing process. I make a moist gluten/ soy "burher" and stew cubes by making and grinding my "unchuck" recipe. To reach it, do a search on unchuck.

There are two types. There is a dried type called TVP which you just soak in hot water and use like any meat chunk. Or you can make the unchuck roast or any of my gluten and soy mix fake meats and cut it into chunks just as you would a raw chuck roast.

As mentioned above, start by using tomato juice, bouillon, or other liquid with some flavor to moisten the dried chunks. Then use a flavorful recipe with something besides water for at least part of the cooking liquid. Add a pinch- just a pinch- of vinegar or cayenne for an underbite.

Victor, if you are wanting to make tofu, go to the clear light section and read the very comprehensive directions. If you are wanting to make my gluten-soy seitan, read the three pages, starting with the Unchuck roast. These are the best explanations I have for these two types of soy meats.

Soy meat recipes without wheat
I'm wheat and gluten intolerant. Would you make some suggestions for a soymeat ball I can use in pasta sauce and on a rice bread roll meatball sandwich style?
I finally got my hands on a copy of "Simply Heavenly" after seeing it mentioned here and finding it at the library. What an excellent book! I highly recommend. I cannot understand why S&S doesn't reprint it. Maybe we should start a petit foursion drive! :o)

You buy the dry chunks, they look like dry kibble, soak in broth, hot tomato juice or hot water, then use like meat chunks. You can't make them at home, they are a manufactured product. However, you could make my unchuck roast and cut it up into chunks and use it.
