Meat for Graduation party

I am planning a graduation party. I am fixing barbequed chicken, pulled pork and ham. How much raw of each would you say I need for about 75 people?

You want to end up with about 8 ounces ready to eat meat and have enough so everyone gets at least some of their first choice. If I were doing this, I would make 1 piece of chicken per person plus 10% PLUS about 3 ounces ready to eat pork and 3 ounces ready to eat ham. You will have some left over, but not too much, and everyone will get at least some of their favorite.

What a terrific website! I have been searching for my specific scenario and just haven't quite found the info I need. We are planning for about 75-100 people this weekend. Our plan is 100 pieces of fried chicken and 20 lbs. of pork loin. We just put 5 seasoned pork loins in a Rival 20qt. roaster oven with some liquid in the bottom. I did just read that we should have done this the same day as the party. What temp should we roast them and what would be the best way to reheat to keep meat moist.

Are you serving the pork loin as BBQ, in which case you will simply slice/shred and refrigerate in sauce then reheat day of. Reheating sliced straight results in pretty dry meat; make a gravy or fruit sauce to serve with, and put chicken broth in the tightly covered pans to reheat in the oven DO NOT use the microwave to reheat pork, it is not good. Roast the same as the oven, just start checking about 1/2 hour earlier, and remember you want to go to internal temp of 185 if you are going to shred.
