how long to cook pork butt in roaster

how long do i need to cook 65-75 lbs. of pork butt in an electric roaster? im making bbq sandwiches for party eating at 5 pm

This is way too much for one roaster. You want to do about 20-25 pounds tops at one time.

To make pulled/shredded pork you need to reach an internal temperature of 180 degrees. Pork tends to plateau or hold its temp at around 165 unpredictably, sometimes for up to several hours, before it goes to 180, and oit does not work to turn up the heat.

If it were my party, I would roast all the meats 1 to 2 days ahead to be sure to get tenderness with no time complications, store in the refrigerator in sauce, reheat tightly covered for several hours in a 350 oven and serve out of the 180 degree roaster, using it as a giant crock pot.

ok thanks picking up my meat on thursday so i will get busy what do i set my roaster on to cook this 350? ive never used one before .

Yes 350. And if it is a new, never used troaster, set it outside and run it empty for a couple of hours first; it has to burn off manufacturing lubricants and stuff, and it STINKS.

Do I need to add liquid to the pork?
Do I need to add liquid to the pork when it is cooking? If so what kind and how much should I use? Also do you suggest any seasonings on it while it cooks.

Read the jerk ribs recipe on the bbq page and read the pulled pork thread, both have great seasoning suggestions. As long as it is covered and 350 or less, it does not need more liwquid- it is a nice juicy cut.

If you do add liquid, beer or ginger ale are interesting choices.
