Beef BBQ Sandwiches

Hi Ellen, I'm getting ready to have a Grad BBQ, and I want to be practical with what I have in the freezer. I have left-over from the year before's half beef in freezer lots of steaks. It is a hassle to BBQ steaks for a crowd - various cuts - so I'm thinking of putting them in a crockpot and cooking them down, shredding the beef and adding a BBQ sauce. Price is right - I've always paid for the meat. Suggestions on just how, and seasonings while cooking down? Thanks!

You don't say how much meat, but you can do it tightly covered in the oven at about 300 for about the same time as you would for a crockpot and you can do large amounts. I might layer in some onions- not garlic- and cover the bottom with beef broth, not water, but I would not spice or sauce until shredded. Then freeze in sauce, thaw in refrigerator, reheat tighly covered (NOT in crockpot) and you can serve in crockpots or roasters depending on t he size of the crowd.

Thank you Ellen. I have about 30 pkgs of two steaks each (mostly rib steaks, t-bone, sirlion tip) I have the large Nesco Roaster. Can I just throw as many as I can get in the roaster w/some onion and let it cook, then shred. Cool. Add Sauce. Then freeze in portion amounts?

Yes. Keep it at 300, keep it covered and it acts like a crockpot on high.
