Turkey and Beff amounts

You are awesome Ellen! Despite your warnings we are self catering wedding reception for 300. {Have had some experience.) Doing pulled BBQ beef and pulled turkey-cranberry sliders. I 100 lbs bone in turkey breasts raw- is this adequate? Have sourse for shredded beef- will 60 lbs cooked be enough? Having simple sides of slaw, beans, cheesy potaoes & watermelon. Thank you immensely!

The thing with serving beef and turkey is that most parties favor the beef, so caterers plan 5 ounces ready to eat beef PLUS 3 ounces ready to eat second meat per person. You would not need quite that much solid meat, because it is sandwiches, but you would probably need that much sauced ready to serve of each. That means closer to 100 pounds sauced ready to serve beef PLUS 60 pounds sauced ready to eat turkey.

You will get about 10 ounces of turkey meat per 1 pound of bone in raw turkey breast, so about 500/8 or 64 pounds solid turkey meat. I assume there will be gravy involved in the pulling, increasing the amount. So you are fine on the turkey. The beef on the other hand, could end up short.

Hope this helps with your planning. Recruit LOTS of helpers. Have someone serve the meats or else add another 10% if they are self serve. Ice the melons the day before. Have fun.
