I am starting a wholesale potato salad business. I am not sure how to calculate how long these salads will keep? I will be making vinegar, and mayonaise based salads. Any information would be greatly appreciated. Also any ideas for packaging/sealing large quantities to preserve shelf life. Thanks |

You need help from a commercial pro, and that is not me. Try chef2chef.com. You also need a commercial kitchen, in most states you cannot legally make food for sale in an unlicensed kitchen, includes all unmodified home kitchens. |
