URGENT: Baking bread questions

I have 2 questions that I need answered ASAP.

What is the substitution ratio for extra large egg yolks if using farm eggs?

I have a recipe that calls for 7 1/2 loaf pans and I only have 9 x5 ones...do I just make 2 loaves instead of the 3 this is supposed to be?

Yes, 2 9x5 is just about the same as 3 7 1/2- but if the bread is very heavy (banana breads can be for example), it may have a little more trouble rising. Be sure the oven is preheated, use a slightly lower temp, cook a bit longer.

8 egg yolks is about the same as 6 whole eggs. 1 dozen whole large eggs weigh 21 ounces in the shell- you can by weights- commercial bakers do.
