Quantities for 320

Hi Ellen,

I'm cooking for 320 people - Evening dinner at 6:30. I am having fried chicken and roasted pork loin for the meats. Also having mashed potatoes with pan gravy, green beans, buttered corn, salad and rolls. I have ordered 450 pieces of fried chicken and 70 lbs. of uncooked loins. Could you please tell me if I have ordered enough chicken and pork? I am having servers for the pork. Thank you.

If I were calculating this, I would figure 5-6 ounces ready to eat pork PLUS 1 piece of chicken per person. So I would say you were fine, maybe even over on the chicken but way short on the pork, even with servers. Figuring about 2 pounds raw boneless pork for each 5 people, which allows for shrinkage, you need about 128 pounds of pork...
