We do prime rib dinners at our sportsclub and they're getting bigger. Usually for a fundraiser we top off at about 75 people (we do 'till gone) which is good because I can only do three roasts in each oven. So we're looking to do a dinner for 160-170 in December and again in January. Is there a commercial oven in which you may do six or even nine roasts simultaneously? We have a commercial kitchen and get inspected regularly, so anything we get has to be professional. I found some things on the 'net but It's hard for me to tell capacity. Thanks! |

There is one oven that is fabulous for this kind of roasting: the alto-shaam, also spelled altosham and a variety of other odd mis-spellings. It is a cook and hold roasting oven, comes in several sizes, and perfect for roasting. |
