let me ask if I can do the following: pulled pork (served with beer so will be popular) = 35lbs with 200 rolls mac n chez = 5 9x13 pans (4.5 gallons, but how many lbs?) canned baked beans = 5 gallons
pasta salad = 20lbs fruit for 100 from your page. is this enough food? do i need a vegetable? |

what should i use to cook/hold the following: pulled pork (one or two 18qt roasters?) mac n chez (9x13 pans- how many?) baked beans (9x13 pans or roaster & how many?) pasta salad (???) |

Sigh. The pulled pork made with 35 pounds raw boneless lean pork shoulder is fine for 100. Use one roaster and refill. You only need 140 rolls if it is regular sandwich size rolls, but 200 smaller ones would be a good serving choice- slows people down. Remember to put out extra sauce. You need 8-10 9x13 pans mac and cheese, that is about 4 gallons, 1 pound mac per 9x13 pan. Use a roaster for the baked beans, it will be quite full, 3 gallons, or 4 #10 cans. Add some seasonings- see the bean page. 20 pounds pasta is plenty. Put it in a bowl inside a bowl of ice to keep cold, especially if it has chicken. I would add slaw, about 3 gallons or 20 pounds, its traditional with pulled pork. |
