any recipes for cooking a rice dish for 60-75 people. I am limited with cooking space and wondering about electric roaster recipes that would compliment roasted pork loin. Thanks |

You can do a rice pilaf directly in a roaster, where you bring it to a boil, turn down to about 300- 350 and cover tightly while it steams. For roast pork, I would probably do a pilaf such as slivered dried apricots and toasted pine nuts or pecans folded in as it finishes cooking. For 75 people, start with 5-6 pounds dry rice. |

thanks, ellen. could you tell me about how long it would take for that amount and would you recommend I do that amount in one or two electric roasters? Can you recommend a good recipe for the pilaf? Thanks again. |

It will just barely fit in one. Bring to a boil at 350, turn down to simmer, and cook tightly covered. Recipe for baked rice is on the recipe page. I sometimes cook the raw rice in a little butter until it turns pearlly white before cooking, and use vegetable or chicken broth as part of the liquid. |

Thanks again, Ellen. From looking at the baken rice recipe, it appears that it will take at least an hour plus 5 minutes for each additional inch of rice above 2 inches?? Does that sound right? So, I should plan about 1.5 hours for the rice to absorb all liquid? Just trying to figure out my timing for this dinner. |

Check it at 1 hour and turn down to 180 if done. |
