Cooking Rice in a Nelson No. 110 Cooker/Deep Fry

How much white rice can I cook in this appliance? How many pounds of dry rice will I need to feed 75 people. We're having luau food, kalua pig, chicken long rice and teriyaki chicken. I will be serving macaroni salad and fresh fruit also. This is my first Big dinner. Any hints or suggestions will be greatly appreciated.

Sorry, I am not familiar with this appliance or its size. You need about 6 pounds of dry rice, which would cook up nicely in an 18 quart roaster, if that helps.

It does help! This site is fantastic! I'll be borrowing a Toastmaster 18 qt roaster but I don't have the instruction manual. Can I cook the 6# at one time, if so how much water should I add. What temperature and how long will this take to cook? I cook kalua pig for my family in a crock pot. What temp. on the roaster is comparable to a crock pot's temp? I'm figuring 18# pork (2 pork butts) will cook up nicely in the roaster at one time. Do you have any idea how long this will take to cook?

Yes, 6 pounds is at the top of what you can cook in an 18 quart roaster, put the water in, bring to a boil at any temp, pour the rice in and stir well, turn down to simmer (varies- somewhere between 200 and 300, depending on the roaster. Cover tightly and cook away, takes about the same time as the baked rice.

18 pounds pork is also great for 1 roaster, 200 is slow cooker low, 300 is slow cooker high. If set at slow cooker temps, takes the same time as the slow cooker, approximately. After you do this, I would love to post the recipe!
