Pounds of carne asada

08/10/09 		i am going to have a baby shower and i am going to make carne asada tacos and wanted to know how many pounds of carne asada should i buy for 100 guests.

Im throwing a party for 100 guests and im making tacos out of carne asada, chicken & Tripas. How much of each should I get? I am really confused when it comes to the tripas since they shrink so much, and I want to have a good amount of all 3. Im gonna have all the toppings lime, onion, cilantro, salsa and will be serving Mexican rice on the side!

08/15/09 		It takes 4 pounds of raw tripas to make servings for 6 people. If you are making the fillings, I would do this:
12-16 pounds raw tripas
20 pounds raw boneless chicken
20 pounds raw boneless beef

I would add charro or borracho beans to the rice and tacos.
