finger food reception for 100

I used the charts on the web site to cater a wedding for 225 and had a ton of food left. I am now helping a friend with her daughters wedding and she wants finger foods. Meatballs, lil smokies, finger sandwiches, chips, cheese, pickles, crackers,fruit and veggies. Reception will be around 2:30pm. I don't want a repeat of all the left overs but I don't want to run out. Any suggestions?

Wendy, your experience was unusual, one of the most common comments about the site is how accurate the quantities are. I wonder if you had multiple items where the amounts needed to be adjusted- I explain how to do this on the BBQ and brisket page.

You need about 1 1/2 pounds of food per person not counting dessertif it is at a mealtime, even if it is all finger foods, only about 1 pound if the guests have eaten before they came, as they do before a 1 PM wedding. See if the appetizer planning page makes sense to you , it is pretty specific about quantities. 1 piece of finger sandwich (1/4 to 1/3 of a regular sandwich) counts as 1 "bite". You can cross check by adding up all the weights when you think you have your list, and then seeing if it is about 1 pound per person.

I don't recommend this site for pro caterers, I suggest chef2chef.com or cheftalk.com.

Thanks for the info. I do think the problem was multiple items that may have needed to be reduced. I will check out the BBQ and Brisket section and see what I can come up with. If I have any questions after that I will check back. Just as a side note I am far from a real caterer. I just have a big family and love to cook so I tackled my nieces wedding. Fun expereience. And better to have to much than not enough.
