I've read some of your posts and gleaned that for steaming there should be 115 or less hot dogs in a roaster. That it's best for them to be vertical. And that you put the roaster at 350 degrees and turn down to around 200 when done to keep warm. I bought Ambassador beef skin on weiners. Question 1: How long will it take once the boiling water is poured into the pan and the cover put on for a full roaster or hot dogs to come to temp? Question 2: my racks leave space on the ends so some hotdog ends will be in the water. Is that how it works for you??? Thank you! I'm hoping you're on the net and reply tonight or early tomorrow because that's when the potluck is. EEK!!! But I'll appreciate seeing your response whenever because I'm sure we'll be doing this again. |

Hope this gets to you. Next time give me a little more leeway! Use a cake pan, foil wad or whatever to keep the hot dogs on the rack. Not in the water is good. Steaming usually takes about 30 minutes, might be more if they are very cold or thick skinned, check by sticking an instant read thermometer in on, You want 180. |
