I am making the 'fixins' for pioneer days in my hometown. I am making a chuck wagon stew with venison, cabbage, potatoes carrots and onions. I THINK I figured out that I would need about a bushel of each vegetable and about 15 pounds of meat. If someone has a better idea I'm sure listening! I am making brown betty for dessert in 9x13 pans. How many pans will I need for 200 people? I'm also making old fashioned buttermilk biscuits. Do you think 200 is enough or should I make more? How many more? HELP!! Thanks!! |

People will eat 2 biscuits each, especially if there is gravy, sorghum or honey to put on them. I would do 30 pounds of lean, raw , boneless meat minimum for 200 people. Of course it is a pioneer dish so you could stretch it with rabbit, squirrel or dark meat chicken, like a traditional burgoo. You want about 30-35 pounds cabbage, 40-45 pounds carrots, same of onions and 60-70 potatoes to make full size servings for 200. The brown betty will serve 10 if they are helping themselves, 12 if you serve it. If self serve be sure to cut the pieces before putting the pan out. |
