I am cooking for 250 people, how much food do I need?
Baked Chicken
Cabbage Rolls
Rigatoni
Red parsley Potatoes
Green Beans

This is a site for home/volunteer cooks and I am not responsible for paid caterers using my amounts. That said, if it wer me, I would:

Baked Chicken
Red parsley Potatoes
Green Beans
are all covered on the plan for 100 page, use 2 1/2 times the amount for 250.

Cabbage Rolls allow 1 apiece and you will have few to none left, but 2 is too many. Go somewhere in between based on the popularity of this item in your area (varies).

- if a main dish type with meat, ricotta, etc, make about 100 servings but make shallow pans so people take smaller servings. If a side dish, since you vae the potatoes, reuce the potatoes to 30 pounds per 100 and make about 6 pounds dry per 100.
