I am planning on a party surving kabobs as the main course. Beef and chicken, or maybe just chicken. The kabob will also include a variety of vegetables. How many kabobs should I plan on per person? Thank you for your help

Since I am not having shrimp or pork--should I go with 2 lbs chicken and 2 1bs beef per 5-6 people. If I decide on just chicken then double that to 4 lbs per 5-6 people ? Interpet that to 2 kabobs per persone ?

If you do all meat kababs with the veggies separate, my recommendation, 2 meat and 2 veggie is great. You need about 8 ounces of raw meat per person for a single meat, about 9-10 ounces split 6/3 or 6/4 for beef and chicken. Unless it is an unusual crowd, more people will eat beef and with two choices they will eat more meats than with one.

Shrimp kabobs are expensive, easy to overcook and don't hold well. Is there a reason for doing shrimp instead of beef, lamb, or chicken?

That said, you need about 5 ounces of head off, shelled shrimp per person, the best way to make them is to get large enough shrimp to put two skewers through, like a fork instead of a single skewer, that way when you turn the kabob the shrimp does not spin around and get overcooked on one side while not done on the other. You need to partially pre-roast your onions and peppers as they will not get cooked in the time it takes the shrimp to cook.
