Looking for an easy chicken recipe for 300. Will be using roasters. Also need recipe for an easy way to peal potatoes in mass. The other cooks are inexperienced so please make it easy. |

Simplest chicken is baked or roasted, such as rub the quarters with pesto or an herb rub and bake at 375. No easy way to peel potatoes; either use a peel on method (baked? boiled red?) or oven baked rice pilaf. Second option is to make a chicken dish such as my orange dijon wedding chicken ahead, freeze and reheat. For 300 you will need about 8 roasters; does your site have enough electrical circuits for such a load? |
