I'm trying to figure out how many vegetables to buy for fresh vegetable trays for 250 people. The two ounces per person amount is that two oz. per vegetable or two oz. total? Menu also includes fruit tray, peeled shrimp with cocktail sauce, cheese & crackers, almonds & mixed nuts, cookie tray, punch & coffee, tea water. Hours 2-4PM & 7-9 PM. A grand opening for a woman's fitness center. |

Sorry to tell you, as a one time event you can't do much cheaper than the soup-and-salad-bar type franchises, about $8 per person with tea. The salad and potato bar quantity table was lost in the computer crash of December 24 and is not yet reconstructed. You can get gorgeous baking potatoes cheaper by the case at a produce market , you want the size called "80's" for the really big ones. If you buy by the bag, roast some garnet yams, too. You can get basic ideas about the potato bar toppings by using the taco tables- the amounts are very close. |

Patti, 1/2 cup ready to eat, which is about 4 ounces for most fruits and vegetables, is counted as 1 serving. In the OAMC section in Big Pots, there is an enormous table on how to convert between weights as purchsed and cups as served for all kinds of foods, including most fruits and vegetables. You want about 110-120 servings for 100 people if it is buffet style service. |

For 110 people, I would suggest more like 200 pieces. The #10 cans (the big ones) hold 24-25 1/2 cup servings, 4 cans is 3 gallons, I would want about 12-14 cans total for 110, for example, 5 cans of baked beans. So you might add more, or consider mixing, for example, a #10 can of drained chop suey vegetables is delicious in the green beans; or stewed tomatoes or lima beans in the corn. You want 2-3 muffins per person, consider using the simple cornbread recipe on the chili page, much cheaper. Do have real butter, jam and honey for the bread. |

I am out of practice and am doing dinner for 35 (mostly men) of roast beef, mashed pot, carrots, boiled onions, dessert, etc. I assume I will do 1x1 sirloin...stuck on the amount though. I also can't remember the average size of a 1x1. I am thinking 11-13lb? I think I need 15 lb. of beef, 15 lb potatoes, 10 each of carrots and onions. Does that sound about right? Depends on if you mean raw, bone-in weight. If so, this piece will only make about 9 pounds cooked ready to serve beef- fine for plated, but if it is buffet, you want someone serving the beef to make sure everyone gets some. Rest looks like plenty. Unless you are sure all are beef eaters, consider adding a side dish that can serve as a vegetarian/ non-beef entree. |

The basic rule of thumb for these little ones is 1 tablespoon per year of age, so a serving for a two year old is 2 tablespoons, while for a 4 year old it is 1/4 cup. There is a page on the website that converts all kinds of cans to cups- and another for most pounds of fresh food to cups. This should help. Also, the USDA publishes nutritional guidelines for school meals for kids of all ages- that will give you further guidance. |

Be sure to slice the ham ahead, and you will use about 10% less if someone serves it rather than self-serve. |

Laura, a big boneless chuck roast will be fine and much cheaper than all the little tri-tips. Go toward 25 pounds with the chuck, it is a little fattier than the tritip. The amount needed goes down a bit with heavy sides such as scalloped potatoes and broccoli casserole. Nancy, 7-8 pounds is plenty. |

Hi, Val, Since I posted all my quantity tables in 2004, I ask folks to estimate their amounts first, then let me check them. For example, if you are planning for people to make sandwiches with the meat and buns, you need different amounts than if it is simply plated. Time of day and type of service also matter: you need about 10% more for buffet service than for table service, and you need about 50% more at a mealtime tan in the middle of the afternoon. So take a stab at estimating and then send that with some details about the time of day, type of service, etc, and I will be glad to check it for you. The most complicated estimate is the cabbage rolls, and with the other meats, I would allow 1 per person plus 10% if they were larger or 2 per person with no extra if smaller. |

You want 2/3 of the amount for 100- you will find all your items on the plan for 100 page and the BBQ and brisket page. For example, slaw for 100 you start with 20 pounds fresh cabbage, so your party would start with about 14 pounds, 35 pounds raw potatoes for 100, so about 24 pounds for 60-70. 6 pounds of chips for 100, so you want about 4 pounds. There is a page for beverages, and the sandwich event page tells all about condiments for the sandwiches. I allow 1 hotdog per person, and I encourage you to consider Polish sausage or kielbasa- tastier and about the same price. |

What I would do is allow 1/2 pounds raw weight ribs per person PLUS 1 piece of chicken, skip the hamburgers and have Polish sausage or kielbasa instead of regular hot dogs, get a litttle over 1/2 sausage per person. If you are on a budget, watch for the sales of previously frozen spareribs- they get as low as 1/29 a pound here. Chicken is least expensive if it is all leg quarters, cut into two pieces. The sausages are least expensive at warehouse or club stores. |

Vicki, good timing people will have eaten lunch, so you only need about 1 pound total of food per person. Did you look at my veggie tray page (button at the top of the cook talk main page). 3 days ahead is a little early for some of your veggies, there is a prep ahead table on that page. If you buy and store VERY carefully, you will probably be OK with the peppers and cukes, but you could also consider going for peperoncini and sweet banana pepper rings and little sweet and dill whole pickles, maybe some olives- a nice relish touch and ALL READY TO SERVE from the jar or your homemade Italian dressing marinade. Maria, you need to provide additional information: buffet/self serve or plated? Gravies, sauces? Desserts? Salads? Bread or other dishes? Also, I cannot estimate how you should divide up the entrees- I don't know the preferences of your crowd or region. Usually with multiple entrees, you can allow 1 piece of chicken per person. The rest- see the plan for 100 page, meat section, for roasts. There is a table for making lasagna in large amounts on the lotsa pasta page. The rice is the only thing that is easy- if you have no other starches you will want to cook at least 10-11 pounds raw rice. Fresh veggies, you will want about 20 pounds ready to cook per 100. There is a beverage planning list to help with your sodas. Info on fruit salads is on the fruit trays page. Make your estimates and post them and I will check them for you. |

Kay, the canned collards are not too tasty. The frozen are much more delicious. You want 1 pound frozen (2 pounds raw fresh) for each 4 people. For the sweet potatoes, see the holiday cooking section at the top of big pots. For the mac and cheese, depends on the recipe. For the mac and cheese, minimum 1/2 pound per pound of dry macaroni, but I go up to 1 1/2 pounds when I have lots of cheese. I use part sharp cheddar, part moterey jack for creaminess and part aParmesan or Italian cheese blend for depth of flavor. 1 pound of macaroni serves about 10 as a side dish of mac and cheese. |

Amount for 200 people Ellen, This is such an aweswome site. I am planning an anniversary party for my parents. We are planning to serve 200 people dinner (6pm). We plan to serve: Two 180 pound roasted pigs and 18 roasted chickens. The hot veggies we are serving: 4.5 gallons of mashed potatoes, 6 #10 cans of green beans, 6 #10 cans of corn and 4 #10 cans of baked beans. The salads: potato salad made with 40 lbs of potatoes, maccaroni salad made with 8 lbs of dry maccaroni, 4 gallons of slaw and 20 lbs veggie trays. We also plan to have a dessert buffet with about 400 servings of various desserts. Drinks: 96 bottles of water, 6 gallons of tea, caf and decaf coffee and 15 woliter bottles of soda. This looks great, good work, Taylor. The only change I would make, is you really do need mashed potaoes from about 60-70 pounds for 200 people- everybody takes some, even with the potato salad. I would also add 1 or two #10 cans of drained Chinese/ chop suey vegetables to the green beans for interest and quantities. I might put pineapple in the slaw with the pork, and I might put out a huge bowl of the little spiced apples or slices, the red ones, for color and taste with the pork. Also, you might consider on big dish of egg salad or possibly pimento cheese in case of vegetarian diners- with 200 people, you are likely to have some. Have a great party. |

Shirley, go to the article planning and shopping for large holiday dinners in the holiday cooking section at the top of big pots. Melanie, unless you are preparing in a kitchen with commercial ovens (church, school, etc), I am concerned you do not have enough oven space for this menu. You also do not say how many people; you need to tell me how many sandwiches and how many people. If I were revising this menu, I would probably eliminate BOTH the mac and scalloped potatoes, allowing the mostaciolli to stand in for these dishes. I would add a layered dip/ platter such as 7-layer dip. I would consider an antipasto platter type salad or artichoke condite instead of a plain green salad- I have recipes for both these. So give me some more info. |

Good work, Roland. Since prisket is a fatty meat with quite a bit of shrinkage, just be sure that your briskets total out to at least 1/2 pound raw per person. Pork loin and pork tenderloin are the exact same in shrinkage, so you use the same numbers. The problem is with the marinade, it will NOT penetrate the loin nearly as well as the tenderloin; different texture and Much thicker diameter. You can inject with a basting syringe. |

But I suggest you take a look at my "Ellen's better green bean casserole" in the holiday cooking section at the top of the big pots index page; MUCH tastier and more interesting, and holds better on a buffet table. You would need 3 times the recipe for 180 people. Carolyn, this is a very nice size party for this event. You want 1 pound raw trimmed brisket for each 2 people (6-7 ounces ready to eat), 2 pounds dried beans (about 1 gallon plus a pint, cooked), for veggies see the veggies for 100 and use 1/4. For cake, a 2 layer 9x13 would be simple and ample- there is a discussion of cake sizes in the dessert planning section. |

Hi, Lynn, This site is basically for home cooks- I can't take responsibility for advising pros and caterers at ellenskitchen.com, and always suggest you go to the pro boards such as chef2chef.com for help. That said, this menu looks a little goofy to me. Is this supposed to be a buffet-style full meal with appetizers before? There are a bunch of things that just don't seem to go, such as the finger sandwiches and tuna salad. The appetizer assortment needs work, such as why serve wings when chicken is the main dish? And what will the vegetarians eat? There needs to be at least 2 vegetables in the dinner selection, and I strongly recommend relish trays rather than tossed salad. Do you have your liability insurance in place? Do you realize you need at least 3 cooks and a dozen experienced servers to set up serve and clean up this size event? I need the number of people expected and the time of day of the party- people eat less in mid afternoon than they do at lunch or dinner. Finger sandwiches are time consuming to make, hard to keep moist for serving and the leftovers have to be thrown away. Consider a mini sandwich bar with an assortment of small rolls and cocktail slice size breads, with bowls or platters of fillings. Less waste fresher, and MUCH less work. |

If so, you need just 1 pound raw boneless beef for each 4 people, but do get a good beef base (any restaurant supply house) to strengthen the gravy. 22 pounds each approximately for each 100 people for carrots and onions. 35 pounds per 100 persons for potatoes.

You can boil the potatoes, drain cube and chill them, but I would mix and dress only one day ahead- it is nice for the celery to have a little crunch left. Baking potatoes sold by the case weigh 40 pounds and may have 80 (large restaurant type baking potatoes) to many more potatoes (hundred+ for smaller). So if you are serving 200, you have to decide what size potato and then just order the right amount of cases from a produce wholesaler. Don't mess with bag potatoes- you need uniform sizes for easy baking. You need one per expected person, and if you are not sure of your numbers, consider making twice baked potatoes which are very popular, can be made ahead and can be frozen if not used. I would add another vegetable for a wedding dinner and also fried apples, or crab apples (the little red ones) or a fruit tray to round out the plate. |

Wedding Reception for 150 People I am helping my best friend of 40+ years plan her daughter’s wedding reception and we really need some advice on the quantity of food to prepare. The wedding is at 2pm so we do not need to feed the 150 people lunch or dinner. Her daughter is getting married in her parent’s yard. The reception will also be outside. Hello Ellen, We are planning a wedding reception selfserve buffet style for 375, that number gives a little extra also, we planning for sliced beef roast which is precooked and preseasoned so we will just have to warm it in nesco or whatever and grilled chicken as a second choice along with all the other sides (beans, potato salad, fruit salad, pasta salad, etc.) Our meat market recommends 140 lbs of the beef roast, it is boneless by the way, and also 600 pieces of chicken, these are 3 to 3.5 lb birds already divided into 8 pieces per bird. Does this sound right to you? it sounds a little excessive especially in the chicken number. The meat market also thinks the beef will be more popular than the chicken so I don't see reason for such a large amount of chicken. Thanks, Tom |

Lori, yes, it is less prep to make the salad, but I would make 2 salads- one green and one starchy (potato or pasta, pasta is easier). Use the plan for 100 amounts. If you go with the veggie trays, use the veggie tray page and don't omit the dip. 2 of the classic relish trays would be a very good idea with this menu. For the sandwiches, see the sandwich page for amounts per 100, and include the condiments. If they are heavy eaters, use the teen section. There is a condiment table on fixings per 100 which will cover the toppings. You will need at least 4 serving areas if this is buffet style and not on each table- see the discussion on speeding up the lines by pre-separating the meat servings, ala subway. |

Yield factor is the difference between the weight as purchased and the weight as served; for example, 1 pound, 16 ounces raw boneless beef, cooks up to 10 ounces ready to serve, the yield is 10 divided by 16 or about 62%. Jane, PLEASE read the comments on prep in the festive family brunch; you do not have enough kitchen to do this menu unless you add other kitchens. If you are a part of the wedding, you will also need 2 people cooking and about 6 people setting up, serving, and cleaning up for 100 people.
50# boneless beef chuck eye, you need just 40 Skip the roasted baby back ribs (about 2 per person.) If you want something along this line, consider cocktail smokies as part of your appetizers (you need an appetizer table, I have written about this).

If 6 people are bringing main dishes for 60 people, you want to bring no more than about 18 people's worth- everybody eats a lot, but no more than about a third of a normal serving, so they can try everything. So if you usually make for 6, make 2-3 times, for 4, make 4 times (or 2 times, twice); easy. Have a good time. |

Perfect size roast. This is a reliable recipe. www.foodnetwork.com/recipes/anne-burrell/crown-roast-of-pork-recipe/index.html Because your roast is 10 pounds, it may finish up to 1 hour earlier. Use a thermometer to check, pull by 150 degrees, let stand at least 30 minutes before cutting. 3 cans black eyed peas will be plenty, unless you are in an area where these are really popular.
Consider frozen green beans- fresher tasting. 4-5 pounds potatoes, judge according to the appetites of your guests. 2-3 pounds raw cabbage. Frozen collards are another option, tasty and traditional. You want to end up with 24 pounds per 100- so the amount you start with depends very much on the vegetables. For 3.4 kilos I use 7 liters chopped mixed veg, up to 1/4 onion. Onion is tastier if sauteed first. This is about 2 liters per kilo, quite a bit of veg in the rice; some folks use half as much. |

4-5 pounds of fresh string beans. Collards are a little harder to estimate, since people take none or lots; If you are buying whole fresh collard green that have to be washed and trimmed, 8-10 pounds; if frozen, 4 pounds would be plenty. I am planning a wedding meal for my daughters wedding in september, but though that I might need to figure out how much food I need to get for it before its actually here. We are inviting 250 people and we are serving pulled pork, corn, baked beans, pasta and my mother's famous rice, along with hamburger buns and dinner rolls. Would love to try a plateful of your mother's famous rice! This is about what I would do. 250 people pulled pork, 50 pounds ready to serve
buns, 6 per pound, or 12 slider rolls per pound, this is an easier to eat alternative with less waste. Entree alternative for non-pork eaters and vegetarians, with 250 people you will have some- about 2 dozen servings, or 2 half pans, minimum. OR you could do mac and cheese as your pasta dish, in which case you would start with about 20 pounds of dry pasta, 1 quart sauce per pound, 1/2 to 1 pound cheese per pound.

One appetizer service area serves about 100 guests, so you would plan 2.
