We feed our college football team after the game whenthey are away before the get on the bus to head for home. I need to fee 100 players and coaches and prepare(reheat) the food outside of the locker room - I was thinkning Italian saugages on a bun with roasted peppers and onions - any suggestions on menu or what temperature and how long it will take to reheat in electric roasters? |

Since you have no way to refrigerate the food before reheating, I can't think how you would keep within the food safety guideline of less than 4 hours from oven to mouth, with the trip, the game and all. The only thing I have on this site that would work for you for safe hot food is the baked potato bar, with the bake and hold technique for the potatoes, and I would allow 2 potatoes per person for this crowd. You could hold chopped ham or beef chilled in ice chests (with the butter, sour cream etc,) for the proteins. |
