caribbean rice & peas

09/30/09 		I have been asked to prepare rice and peas for 50 people. I have in the past made for a church function a large buffet pan full, but that was for an uncertain number of people. Now I have been given a specific number (50) of people and I don't know how much I will need. Please help

If this is one of several side dishes, 3 pounds dry of each will be plenty. If it is a main dish, you would want 5 pounds each.
