I am not kidding- it depends on the size of the meatballs! You want a medium fat ground, such as ground chuck, for best flavor and texture because leaner makes dry meatballs. You handle the meat gently to keep from toughening, and browning under the broiler is easier than in a frying pan if you are doing a lot- see the spaghetti for 25 page. About 1 ounce per meatball, 3-4 meatballs per serving, you want 32 pounds. Cocktail/ appetizer meatballs are about 2/3 this size. Ellen |
