I am serving appx.100 people. The menu consists of baked ziti, chicken scampi served over pasta, meatballs(served alone}and garden salad. I need help with the portion ammounts. I have read your portion ammounts on pasta but with 3 types(not my idea) I need to know how much to serve with each. Thanks |

Unfortunately, with 3 items and just 100 people, you will end up having to make more than you think, in order to make sure everyone gets their first choice on the first serving- I presume it is buffet service.
People will treat the ziti as a side dish unless it has meat in it, you would allow a max of 8 pounds dry pasta. The chicken, you want 3-4 ounces cooked meat per person, that is 2 pounds raw boneless for 9. 3 ounces cooked meatballs, and you won't have much of these left. |
