Dear Ellen: I am catering a backyard wedding for my sister who has 300 guests. She would like me to prepare 2 types of sandwiches, a meat and potato stew, green salad and a dessert. How many ounces/pounds of each would I need to make for 300 people? Help! and thanks in advance for any advice you can offer. Karen |

This is a rather different menu. I would go back to her and negotiate for 2 hot soups, one meat and potato, one deliciously creamy, instead of the stew. It would go better with the sandwiches and be much easier to estimate. Then I would add a great pasta salad and fruit trays. Visualize this plate; tasty sandwiches, a steaming cup of soup, 2 colorful salads and fruit. The problem with the stew is just stew and salad is rather skimpy, but folks aren't likely to take stew and sandwiches. The second concern is about made ahead sandwiches. If you read the article on sandwich events, you will see that pre-made sandwiches are labor intensive and hard to keep fresh. A sandwich buffet, make it yourself, is an option. For any kind of buffet for a group this size,, but you need at least 4 lines for a buffet this size, and six would be a lot better. So talk it over with the bride and get back to me. The simplest dessert would be a dessert bar with 4-6 kinds of cookies, bars, mini tarts, etc. There is a whole article on estimating this. |
