I am on a wheat and milk free diet. I am looking for a good bread recipe using soy,or a combination of soy or other grains. I have tried spelt flour and its ok but not as soft as regular wheat bread. Please help. thank you |

Unfortunately, what makes the yeast bread "tender" and light while giving the bready texture is the gluten, so gluten free breads use a lot of different ingredients (vegetable gums, pectin, etc) to try to duplicate the texture and none of them are perfect. Using a bread machine to mix and bake one loaf at a time makes it possible to get closer to that desirable bread texture. The wheat-free dough is hard to handle by hand. If you can use spelt and like the flavor, you might consider using/borrowing a bread machine to see if the thorough kneading improves the texture enough to please you.
