Keeping peeled potatoes from turning brown

I've read that if you add lemon juice or white vinegar to the water, peeled potatoes won't turn brown. I have to make 10lbs of potatoes but I'm wondering if the lemon juice or white vinegar will alter the taste. Any suggestions?

You need to make the water acid to keep the starch in the potatoes from turning. Nobody seems to notice the taste, but if you are concerned, you can rinse them again after they are all peeled when you are ready to cook.

how many dainties do I need to make for 60 people
I am catering a birthday party for 60 people which consists of tea sandwiches and dainties. My question is how many dainties do I need to make and how many tea sandwiches do I have to make?

I discuss this in the tea sandwich page. You want at least 1 of each type dainty per person, allowing 4 or more. The amount of sandwiches depends on whether it is a luncheon or reception:
