Prime rib is so popular that it tends to overtake other entrees. I would get about 24 pounds bone in raw beef and 12 pounds boneless raw tenderloin. |

When roast beef is available, it is always first choice, and you need to plan on at least 5 ounces ready to eat roast beef PLUS 3 ounces ready to eat pork loin per person. Bone in raw standing rib, that is 1/2 pound beef per person. 2 pounds boneless pork for 7-8 people. |

You need about 150 pounds, get them as close as possible to the same weight for cooking convenience. |
