Can anybody tell me if I can make a large quanity of stuffing in a electric roaster like 14 quarts |

Absolutely, that is a perfect amount for 1 roaster.. It works best if you cook the onions and celery a little in the fry pan before mixing, and it cooks moister than the same recipe in the oven. Keep cooking temp below 350 and keep covered as it cooks. |

If you have a Nesco it cooks from the sides, and you may be able to get away with not stirring if you preheat the oven. Other brands cook from the bottom, and definitely need a little stirring; you still need to preheat the oven 20 minutes before putting in the cook pan. Time depends very much on whether you make a dense moist dressing or a light one. Allow about the same time you would in a regular oven (at least an hour). It is done when the temp in the middle of the pan is 180 degrees on a quick read thermometer. When it reaches this temp ypou can turn it down to 180 to hold for a couple of hours, 165 to serve. |
