what kind and how much ham for carving station

planning a reception for 300, menu to include, drummettes, shrimp and grits, chicken salad on crackers, ham carving station, mashed pot bar, spinach dip, fruit, veg platters. how many shrimp and grits, type of ham and amount. How about 5-6 gal chicken salad and 7lb crackers

The thing about shrimp is, people will basically eat all there is. You need 1/2 cup of the dish per person, even with the other foods. plus 1/2 cup cooked grits.
You need a MINIMUM of 1 pound boneless ready to eat ham for each 5 people.
I would allow 3-4 gallons per 100 people (3 would be fine with this menu), plus 6 pounds of crackers per 100.

For pancake breakfast fundraiser for approx. 400 people how much ham and what kind, and how
much sausage links, should it be 2 or 3 per
person?

See the breakfast planning page for weights, and go by weights. If the plate has both ham and bacon, 2 sausages and 2 ounces ham is plenty.
