SErving a 300 meal fundraiser

We are having a fundraiser for 300 people, a sit down chili dinner with tossed salad, bread, dessert. How many serving persons are necessary? Do we need expeditors in the back setting up trays? If so, how many?

Usual for simple sit down, 8-12 per 100 front, 3 per 100 back.
If you put the desserts, breads, salads and beverages on the table at each place before the guests come in, you can do 6-8 front.
