Measuring Flour

When a recipe calls for flour, different phrases are used in recipes. One may call for 2 cups S.R. flour, sifted and another calls for 2 cups sifted S.R. flour.

Do you sift before measuring or after? It sure makes a big difference and without trial and error, there doesn't seem to be any standard way of knowing except by logic.

Great question. In traditional standard recipe talk, "2 cups flour, sifted", means scoop it out, measure it and THEN sift it. "2 cups sifted flour" means sift it all, THEN measure it- spoon it lightly into the cup, scrape it even with a knife.
