Hi Ellen, I'm making 6 of these double recipes for a wedding. On the recipe it says you can make ahead and refrigerate. I was wondering how far ahead can I make them and refrigerate? |

Ellen, Are you saying that if I cook them I can only refrigerate one day ahead? I'd like to cook them and refrigerate for 2 days then reheat. |

Freezing the baked dish makes for a very unsatisfactory texture. Yes, you can bake the day before. Two days is really pushing it; make on now, reheat half the next day and half the day after, and you will see what I mean. |
