I'm doing a breakfast of 75 people:
I'm stumped I want it to be enough food but not too much on a budget of 300:

Bagels
w/ cream cheese,
Assorted Fruit
Fruit Salad
Variety of Muffins
Blueberry, banana nut, chocolate chip, strawberry,apple cinnamon
Varity of Breakfast Breads
Coffee cake, banana nut streusel,
Varity of Danishes
Cheese, cinnamon and cheese, apple, cherry, cinnamon rolls, turnovers
Beverages
Orange Juice, apple juice, cranberry juice, coffee, water

Brian, this is a good budget if you are volunteering, but tight if you expect to get paid.

One person can do breakfast for 75 with planning, but it will go MUCH better if you have a second person to help set up and man the coffee area.

To stay within the budget, you need to make the breakfast breads, cinnamon rolls, coffee cake, and muffins yourself. Fortunately these can be made ahead and frozen for up to a month. 3-4 kinds of muffins are plenty, skip apple cinnamon and strawberry. Blueberry, banana nut, raisin bran and chocolate chip, make small but not mini, you want about 2 1/2 dozen of each.

Don't do fruits and fruit salad. Do fruit trays. 3 times the tray for 25 listed on the fruit tray page.

3 dozen bagels
8 cups of cream cheese
1 pound of jam
skip the turnovers, expensive, get stale easily, no one cares. Danish, 3 dozen each cheese and either apple or cherry, skip the rest.

Use the beverage table to do breakfast coffee, 3/4 the amount for 100.

Skip the apple juice. do orange and cranberry. Have some bottled water.

Work this up and see how it does for your budget.
