Catering for about 300-350. I want to plan on the higher side. I will spit roast 70 chickens, and grill 150 brats. I will quarter the chicken. Also, I will have, 40 pounds of pasta salad and 40 pounds of potato salad. I think that is pleny, but just curious to see what anyone else thinks. |

That is not enough sides; you need 10 gallons per 100. I would at least double. Don't know what is the event or what else is being served, so can't be more precise. |

It is a buffet style dinner. About 200 people will have chicken, and 100 wil have brats. The other 50 are not sure. Servers are instructed to give one serving per person. |

You have a good plan, but you will find people ask for 2 brats or for a brat when they already have chicken- that is where the pinch is likely to come. |
