Hi Ellen,

I forgot to ask you a question about my menu.

Serving a pasta bar with 3 sauces
Meat sauce
Alfredo sauce
garlic butter sauce

I want to put the Alfredo sauce and meat sauce in chaffing pans to keep hot and the butter sauce in a mini crock-pot warmer and let every one choose what kind of sauce they want on their pasta.

Will this work?

Also wanted to keep pasta warm in chaffing pans.
I've done the pasta in a roaster but thought a chaffing pan would look nicer for this event.

Yes, that sauce arrangement will work.
For success with pasta in chafers, you need to preheat the chafers and the pasta needs to be hot when it goes in.

bbq ham
chicken
macaroni salad
baked beans
cheesy potatoes
corn

Laura, did you post separately? same menu.

You need 4 ounces ready to eat ham PLUS 1 piece chicken per person, add 10% if heavy eaters. 20 pounds frozen potatoes as the base for each 100. All the rest is on the plan for 100 list.
